It’s an ancient cheese, one of the rarest in the world, it takes its name from a small village in the Curone Valley in a corner of the Tortona area (between Liguria and Piedmont) that is still intact and sparsely inhabited.
Montebore is produced with raw milk: 70% cow and 30% sheep. Three shapes with decreasing diameter are placed to mature, one above the other, from one week to two months.
