Traditional piedmontese ricotta cheese produced between 600 and 2.200 metres above sea level.
The law says that ricotta can only be sell after 21 days of maturation and packaged wrapped in fescue hay (alpine thin grass). The tradition of wrapping cottage cheese in hay was born from the need to protect the rounded shapes of the Seirass during transport from the pastures downstream. It is excellent served on its own, used in the kitchen as a filling of fresh pasta, or proposed at the end of the meal with cugnà or honey.
